Ingredients
  

Coconut Cake
  • 2.75 cups all-purpose flour
  • 1 cup butter softened
  • 1.75 cups granulated sugar
  • 4 eggs room temperature
Guava Filling
  • 2 cups guava puree
  • 0.33 cup sugar
Coconut Buttercream
  • 1 cup butter softened
  • 4 cups powdered sugar

Method
 

  1. Prepare cake pans and preheat oven to 350°F.
  2. Mix batter and bake cake layers until golden.
  3. Cook guava filling and cool completely.
  4. Prepare coconut buttercream.
  5. Assemble layers with guava filling and frost cake.
  6. Decorate with toasted coconut and tropical fruit.

Notes

For the strongest tropical flavor, use fresh ripe guavas and full-fat coconut milk.
