Ingredients
  

Fruit Boats
  • 2 large papayas halved and seeded
  • 1 cup mango diced
  • 1 cup pineapple chunked
  • 2 kiwi fruits sliced
  • 1 cup strawberries sliced
  • 1/2 cup blueberries
Lime Dressing
  • 2 tbsp lime juice fresh
  • 1 tsp lime zest
  • 1 tbsp honey
  • 2 tbsp shredded coconut
  • 2 tbsp mint leaves chopped

Method
 

  1. Halve the papayas lengthwise and remove the seeds.
  2. Combine all prepared fruits in a large bowl.
  3. Whisk lime juice, zest, and honey together.
  4. Toss fruit gently with the dressing.
  5. Fill papaya halves with the fruit mixture.
  6. Top with coconut and mint before serving.

Notes

Use fully ripe papayas and chill before serving for maximum flavor.
