Ingredients
  

Main Mixture
  • 2 cups dried apricots softened if needed
  • 1 cup pistachios shelled
  • 1/2 cup walnuts
  • 2 tbsp honey
  • 1 tbsp lemon juice fresh
  • 1 tsp orange zest
  • 1/2 tsp ground cardamom
  • 1 pinch sea salt
Coatings
  • 1/2 cup shredded coconut unsweetened
  • 1/2 cup powdered sugar

Method
 

  1. Soften apricots in warm water if necessary and drain thoroughly.
  2. Pulse pistachios and walnuts until finely chopped.
  3. Blend apricots with honey, lemon juice, orange zest, cardamom, and salt.
  4. Combine nuts and apricot mixture until evenly mixed.
  5. Chill for 20 minutes.
  6. Roll into bite-sized balls.
  7. Coat with coconut or powdered sugar.
  8. Chill again before serving.

Notes

Toast the nuts lightly for deeper flavor and use soft dried apricots for the best texture.
