Ingredients
  

Main Component
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1 vanilla bean split and scraped
  • 2.5 tsp gelatin
  • 3 tbsp cold water

  • berry sauce

Equipment

Method
 

  1. Bloom gelatin in cold water for 5–10 minutes.
  2. Heat cream, milk, sugar, and vanilla until sugar dissolves.
  3. Remove from heat and stir in gelatin until dissolved.
  4. Pour into cups and refrigerate for at least 4 hours.

Notes

Do not boil the cream. Use real vanilla bean for best flavor and appearance.
