  • 0.5 cup unsalted butter cold and cubed
  • 0.25 cup granulated sugar
Vanilla Custard
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 4 egg yolks
Pear Topping
  • 3 pears peeled and sliced
  • 1 tablespoon lemon juice

Method
 

  1. Prepare and chill the tart dough.
  2. Blind bake the tart shell until lightly golden.
  3. Cook the vanilla custard until thick and smooth.

  6. Cool completely before serving.
