Ingredients
  

Truffle Filling
  • 12 oz dark chocolate finely chopped
  • 1/2 cup heavy cream
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 3/4 cup dried cherries finely chopped
  • 1 pinch sea salt
Coating
  • 1/4 cup cocoa powder
  • 6 oz dark chocolate melted, optional

Method
 

  1. Place chopped chocolate in a heatproof bowl.
  2. Heat cream and butter until steaming, then pour over chocolate.
  3. Stir until smooth and glossy.
  4. Mix in vanilla, salt, and chopped cherries.
  5. Refrigerate until firm.
  6. Roll into truffle balls and coat as desired.
  7. Chill again before serving.

Notes

For the smoothest texture, use high-quality dark chocolate and finely chop the cherries.
