- Bloom the gelatin in cold water for 5 to 10 minutes.
- Heat cream, milk, sugar, vanilla, and salt until warm but not boiling.
- Whisk gelatin into the warm cream mixture until dissolved.
- Pour into serving glasses and refrigerate for at least 4 hours.
- Cook berries with sugar and lemon juice until saucy, then cool.
- Top chilled panna cotta with berry sauce and serve cold.
Notes
For the silkiest texture, strain the mixture before chilling.
