Ingredients
  

Coffee Pudding
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3 tablespoons cornstarch
  • 1/3 cup granulated sugar
  • 2 tablespoons espresso powder
  • 1 teaspoon vanilla extract
  • 3 egg yolks
  • 1 tablespoon unsalted butter
Caramel Layer
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 3 tablespoons heavy cream
  • 1 tablespoon butter

Method
 

  1. Cook sugar and water until amber, then whisk in cream and butter to create caramel.
  2. Heat milk, cream, and espresso powder until steaming.
  3. Whisk egg yolks, sugar, and cornstarch together until smooth.
  4. Temper the eggs with hot milk mixture while whisking constantly.
  5. Cook pudding mixture over medium-low heat until thick and glossy.
  6. Pour caramel into serving cups, then top with coffee pudding.
  7. Chill for at least 4 hours before serving.

Notes

For the smoothest texture, strain the pudding before pouring into cups.
