Ingredients
  

Fruit Base
  • 6 cups seedless watermelon cubed
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 2 tablespoons fresh mint leaves finely chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon lime zest
  • 1 pinch sea salt
Optional Garnish
  • extra mint sprigs for garnish

Method
 

  1. Cube the watermelon into bite-sized pieces and place into a large mixing bowl.
  2. Add sliced strawberries and blueberries to the bowl.
  3. Whisk together honey, lime juice, lime zest, sea salt, and chopped mint in a small bowl.
  4. Pour the dressing over the fruit and gently toss until evenly coated.
  5. Refrigerate for 20 minutes before serving for best flavor.
  6. Serve chilled and garnish with fresh mint sprigs.

Notes

For maximum freshness, add the mint just before serving.
