Ingredients
  

Custard Base
  • 1 cup full-fat coconut milk
  • 1 cup heavy cream
  • 6 oz white chocolate finely chopped
  • 4 egg yolks large
  • 3 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/8 tsp sea salt
Garnish
  • 1/4 cup toasted coconut flakes
  • white chocolate curls optional

Method
 

  1. Heat coconut milk and cream until steaming.
  2. Whisk in white chocolate until smooth.
  3. Temper egg yolks with warm mixture.
  4. Strain custard and divide into ramekins.
  5. Bake in a water bath for 35-40 minutes.
  6. Cool, chill, garnish, and serve.

Notes

For the smoothest texture, strain the custard and chill overnight before serving.
