Ingredients
  

Cookie Dough
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 cup butter softened
  • 1.5 cups granulated sugar
  • 1 egg
  • 1 tbsp lemon zest fresh
  • 2 tbsp lemon juice fresh
  • 1 tsp vanilla extract
Coating
  • 0.5 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 180°C and line baking sheets with parchment paper.
  2. Whisk together dry ingredients in a bowl.
  3. Cream butter and sugar, then mix in egg, lemon zest, juice, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Roll dough into balls and coat in sugar.
  6. Bake for 10–12 minutes until edges are golden.

Notes

Use fresh lemons for best flavor and avoid overbaking for soft cookies.
