Ingredients
  

Beignet Dough
  • 3.5 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 0.75 cup warm milk
  • 0.25 cup coconut sugar
  • 2 eggs room temperature
  • 0.25 cup butter melted
  • 1 tsp vanilla extract
  • 0.5 tsp salt
Coconut Sugar Coating
  • 1 cup coconut sugar finely ground
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon optional

Method
 

  1. Activate yeast in warm milk and coconut sugar.
  2. Mix in remaining dough ingredients and knead until smooth.
  3. Allow dough to rise until doubled.
  4. Roll, cut into squares, and let rise again.
  5. Fry until golden brown.
  6. Coat with coconut sugar mixture and serve warm.

Notes

For the fluffiest texture, allow both rises to complete fully and maintain oil temperature throughout frying.
